【原创】自制北方腌腊肉,简单方便!
2013-1-19上午,整理好家务开始收拾昨天亲戚从山里带来的猪肉,养了一年了的肥猪。进腊月门就开始杀猪准备过年,今天是腊八了,泡了些腊八蒜,每家过年都要腌制些腊肉,来年春天解嘴馋用,还有就是以前没冰箱保鲜肉类,只有土办法用食盐腌制,腊肉也是过年必备的食物,先将猪肉打块洗净控干,在选比较肥的备用,制作时案板上撒上食盐,将肉块裹匀食盐放入密封袋,放入冰箱恒温区,15天后就有些味道了,越久腊味越重。食用就是将腊肉切成薄片裹上面糊,在饼铛上煎制金黄即可,春饼在搭配些香葱卷着吃,肥而不腻,最好的北方腊肉是腌制一年,金黄色,有蜡质感!以上只是自己的小心情分享勿喷!嘎嘎
